4th of July Menu Featuring our Veggie Burger

We’ve made your cookout for July 4th a breeze! We’ve got a whole menu prepared for you including 2 sides, a dessert, and burgers! On this menu, we’ve even got 5 different hamburger recipes you can choose from! There’s a burger for everyone. You can choose between our Ultimate Burger, Open Faced Mediterranean Lamb Burgers With Cucumber Yogurt Sauce, Bruschetta Burgers, Taco Burgers With Chipotle Cream, or our Veggie Burger.

Our veggie burger got rave reviews from our test kitchen, so we decided to share this incredible vegetarian option with you here as a sneak peak into our Independence Day Menu!  This burger is time consuming, but, well worth it.

Veggie Burger

Ingredients
  • 1 ½ c cooked brown rice
  • 8 oz pkg baby Bella mushrooms, thinly sliced
  • 1 c matchstick carrots
  • 2 med yellow squash, thinly sliced
  • 2 med zucchini, thinly sliced
  • 1 med onion, finely chopped
  • 1 c panko breadcrumbs
  • 1 t Italian seasoning
  • 1 t salt
  • ½ t pepper
  • 1 egg
  • 6 slices sharp Cheddar cheese
  • 4 whole wheat sandwich thins, toasted
  • Mayonnaise
  • 1 c alfalfa sprouts
  • 2 tomatoes, thinly sliced
Instructions
  1. Cook rice ahead of time. Set aside.
  2. Combine mushrooms, carrots, squash, zucchini and onion in pan.
  3. Add water to cover; bring to a boil over med-high heat; boil 8 - 10 min, or til tender.
  4. Drain.
  5. *Place in the refrigerator and allow cooling.
  6. Squeeze dry.
  7. Combine rice, breadcrumbs, Italian seasoning, salt, pepper, and vegetable mixture.
  8. Add egg, stirring to combine.
  9. Shape into 4 - 6 patties.
  10. Cover, and chill for at least 1 hour and up to 2 days.
  11. Grill patties over med heat for 5 - 6 minutes per side, or until patties are heated through.
  12. Top each with 1 slice cheese.
  13. Spread mayo over bread.
  14. Top with sprouts, tomatoes, veggie patty, and top half of sandwich thin.

    Every year, the 4th of July is “my” holiday, with family coming to MY home. I’m having 8 adult people, including myself and my husband. How many will the sides feed? I’m planning on doubling the burger recipe so everyone can be fed, but I don’t know if I should double the sides and dessert as well. Any advice?

      Hi Kacey,
      The burger recipes make 4 regular or 6 small burgers. The
      sides are geared to feed about 6 people, so I would double the recipes just to be safe. Enjoy!

    Having gluten issues…can I replace the Panko Breadcrumb with something else? I would not eat it with the sandwich thins either.

      Nikki,
      You can make your own breadcrumbs by pulsing your favorite G-free bread in a food processor until it reaches a crumb texture. Hope this helps!

      Our gluten free writer also recommended these tips: Replace the Panko breadcrumbs with an equal amount of G-free breadcrumbs or G-free Rice Chex cereal. Place the gluten-free Rice Chex cereal in a plastic bag. Use a rolling pin to crush the cereal to coarse flakes. Season with salt and pepper and any herb blend that you like. You can serve the veggie burger over sauteed spinach, rice, quinoa or spaghetti squash

    Ahhh!! I made the blueberry cobbler and loved it! I have enough extra to make it again, but the recipe isn’t there anymore. Is there any way to get a copy of that recipe again. I’m so mad at myself for not saving it!! :(
