In our household, I’m not known as being a great baker when it comes to cookies. I finally got my newlywed head wrapped around the idea of cooking, but for some reason my cookies always turn out cake-like. However, with this 5 ingredient recipe I made the perfect cookie consistency! In fact, my husband requested I make this be a regular rotation in our home now. These cookies are divine and I couldn’t stop popping them both cold from the fridge or warm and gooey. The Andes mint icing on top is a perfect compliment to the light airy cookie. We hope you enjoy these easy-peasy cookies as much as we did!
1 Devil’s Food Cake Mix
1/2 c Oil
1/2 t chocolate extract
1 pkg Andes mints
Mix cake mix, oil, chocolate extract & eggs together. Drop spoonfuls of dough onto baking sheet. Bake at 350 for 6 minutes. Once you take cookies out of the oven & they are still hot, place an unwrapped mint on each cookie. In about 5 minutes, the mint will be melted. Take a spoon & smooth out each mint like frosting.
