Appetizer Recipe: Cher’s Bean Dip

appetizer, E-Mealz, recipe, bean dipThis was one of the first appetizers I made on the regular when my husband & I first got married.  It’s easy, relatively healthful as far as appetizers go, and I can pretty much eat half a bowl by myself.  I got the recipe from my husband’s “Aunt Cher” who is one of his family’s lake friends.  We affectionately call it Aunt Cher’s bean dip, but many people think of it as Texas Caviar or many other names.

We make this often for football games, parties, or just a small group gathering. I usually get asked for the recipe and it’s become one of my staple appetizers. Without further ado, here’s the recipe.


  • 2 envelopes Good Season Italian dressing
  • 1/2-2/3 c vinegar
  • 1/2-2/3 c oil
  • 2 can black beans (rinsed & drained)
  • 1 can diced tomatoes (drained)
  • 1 can she peg corn (drained)
  • 1/2 c diced jalapeno (drained, chopped)
  • Add green yellow and/or red pepper amount of your choice
  • Chips to dip with

Mix well, refrigerate, and there you have it; a quick dip that’s party ready. I would advise you to make it the night before you serve it though because it’s better once it seasons through.

    Just wondering about a few ingred. of Cher’s Bean Dip. It’s listed to use 2/3-1/2 c. vinegar and oil. Should it be 1/3, perhaps, of vinegar? I have never seed those fractions used in that order. Thanks.

      Hi Barbie,
      Yes, you’re right it should read 1/2-2/3. I just copied it directly as she wrote it down, but I’ll change it. I usually put 2/3 c of each in because I like it to be more juicy and have more liquid. Hope that clarifies.
