Chocolate Chip Banana Bread Breakfast

Whole Wheat Chocolate Chip Banana BreadBake this whole-wheat banana bread from the eMeals Healthy Breakfast Plan for a portable grab-and-go breakfast on the run. Wrap extra slices individually in plastic wrap, and freeze in a zip-top plastic freezer bag up to 2 months, if desired. Serve with peanut butter for a boost of protein.

Chocolate Chip Banana Bread Breakfast
  • 1¼ cups all-purpose flour
  • ½ cup whole-wheat flour
  • 1½ teaspoons baking soda
  • ¼ teaspoon salt
  • ½ cup sugar
  • ¼ cup canola oil
  • 1 large egg
  • 1 cup mashed banana (about 3 large)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • ¼ cup semi-sweet chocolate chips
  • Peanut butter (optional)
  1. Preheat oven to 350°F.
  2. Whisk together both flours, baking soda and salt in a medium bowl.
  3. Combine sugar and oil in a large bowl; beat with an electric mixer on medium speed until light in color. Beat in egg.
  4. Add flour mixture and banana alternately to sugar mixture, beginning and ending with flour mixture. Add vanilla and cinnamon, beating on low speed to combine. Stir in chocolate chips.
  5. Spoon batter into an 8- x 4-inch loaf pan coated with cooking spray.
  6. Bake 40 to 50 minutes or until a toothpick inserted in center comes out clean.
  7. Cool in pan 10 minutes. Remove from pan, and cool completely before slicing.
  8. Serve with peanut butter, if desired.
