Clean Eating BBQ Chicken PizzaCombine two crowd-pleasing favorites – pizza and barbecue chicken – in this superfast meal that will please even the pickiest of eaters. Substitute bottled barbecue sauce, if desired, to save even more time. Extra Barbecue Sauce can be stored in an airtight container in the refrigerator up to 1 week.

Clean Eating Barbecue Chicken Pizza
  • Barbecue Sauce:
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 8 oz can tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons molasses
  • 1 tablespoon honey
  • 1 tablespoon cider vinegar
  • ¼ teaspoon salt, ¼ teaspoon pepper
  • Pizzas:
  • 1 tablespoon olive oil
  • 1 large red bell pepper, thinly sliced
  • 2 medium yellow squash, halved and thinly sliced
  • 6 (8-inch) whole wheat tortillas
  • 3 cups shredded rotisserie chicken (or sub leftover cooked chicken)
  • 11/2 cups shredded part-skim mozzarella cheese
  • 2 green onions, chopped
  1. Heat 1 tablespoon olive oil in a medium saucepan over medium heat.
  2. Add garlic; sauté 1 minute or until tender.
  3. Remove from heat, and stir in tomato sauce, tomato paste, molasses, honey, cider vinegar, salt and pepper.
  4. Heat 1 tablespoon olive oil in a medium skillet over medium-high heat.
  5. Add bell pepper and squash, and sauté 5 minutes or until tender.
  6. Place tortillas on a lightly greased baking sheet.
  7. Spread 2 tablespoons Barbecue Sauce over each tortilla; top evenly with chicken, vegetable mixture and cheese.
  8. Bake 15 minutes or until cheese melts and tortillas are crisp.
  9. Sprinkle with green onion just before serving.
