Snickerdoodle Ice Cream Sandwich

Ingredients
  • ½ c butter, softened
  • 1 c + 2 T sugar
  • ¼ t baking soda
  • ¼ t cream of tartar
  • 1 egg
  • ½ t vanilla
  • 1½ c all-purpose flour
  • 1 t ground cinnamon
  • Ice cream
  • Caramel sauce (Optional)
Instructions
  1. In a med mixing blowl, beat butter with an electric mixer on med for 30 seconds.
  2. Add 1 c sugar, baking soda, and cream of tartar.
  3. Beat until combined, scraping sides of bowl occasionally.
  4. Beat in egg & vanilla until combined.
  5. Beat in as much of the flour as possible with the mixer.
  6. Stir in any remaining flour.
  7. Cover & chill dough for about an hour.
  8. Combine the 2 T sugar & the cinnamon.
  9. Roll dough into 1 inch balls.
  10. Cover dough balls in cinnamon-sugar to coat.
  11. Place 2 inches apart on ungreased cookie sheet.
  12. Bake in oven at 375 for 10 min until edges are golden.
  13. Transfer to wire rack & let cool.
  14. Take two cookies and sandwich ice cream between the two.
  15. You can also serve extra ice cream on the side & drizzle w/ caramel.
