Black Bean Burgers
 
Ingredients
  • 2 (15 oz) cans black beans, drain and rinse
  • 1½ cups panko bread crumbs
  • ¼ cup minced green onion
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • 1 tablespoon vegetable oil
  • 6 (whole wheat, optional) hamburger buns
  • Shredded lettuce
  • Sliced tomato
Instructions
  1. In a food processor, combine beans, panko, green onion, chili powder, cumin and salt
  2. Process until smooth
  3. Shape mixture into 6 patties
  4. Heat oil in a large skillet over medium
  5. Add patties and cook 3 - 4 minutes per side
  6. Serve on toasted buns with lettuce and tomatoes
