Ingredients
  • 1 cup fresh or frozen coconut meat
  • 1 Tablespoon lemon juice
  • 1.5 cup light coconut milk
  • 1 ripe frozen banana
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons raw honey (sweeten to taste)
  • Ice cubes
  • Whipped Cream (optional topping)
  • 1 Tablespoon toasted coconut flakes
Instructions
  1. Combine coconut meat, lemon juice, coconut milk, banana, vanilla, honey, and ice cubes in a blender; pulse until smooth.
  2. Top with whipped cream & toasted coconut flakes if desired.
