Do I Need a Cast-Iron Skillet? This recipe requires pre-heating the pan and melting butter to create a non-stick effect and buttery crust. The pre-heated cast-iron pan creates a quick crust once the batter is poured in. If you don’t have one of these skillets yet—they’re great for so many reasons—this recipe is a wonderful reason to pick up your first one. We like Staub’s Cast-Iron Fry Pan. You can also try small (10-inch) non-stick skillet. The crust won’t be as crispy, but it’ll still make a delicious treat. Serve with a scoop of vanilla bean ice cream if you’re really splurging.
