The Thanksgiving Leftovers Sandwich is the ultimate in post-Turkey Day leftover food: a tomato slice, turkey, mayo, and some lettuce between two hearty pieces of bread. It’s hard to beat that. This year, however, we’re mixing things up a bit with these fun sliders.
Utilize leftover rolls, turkey, and cranberry sauce. Top these with a tangy and crispy coleslaw so good you’ll be reaching for seconds, even thirds.
Don’t skip the apple slices either. They really put these mini turkey sandwiches over the top with a crispy and tart bite. We could even be convinced to substitute pear slices for apple slices if you have those on hand, but don’t you dare skip the cranberry sauce. We call for whole-berry sauce, but if you’ve got the jellied kind, that’ll be just as good (and more spreadable)
Serve with sweet potato fries or homemade chips, and plop yourself and your remaining family members down for a Friday of online shopping and football games. You’ll be so thankful you have a tray of these sliders to make everyone happy.
Turkey Sliders with Green Apple Slaw
2 Tbsp olive oil
1 Tbsp rice wine vinegar
1 Tbsp fresh orange juice
2 tsp honey
1 (10-oz) pkg angel hair coleslaw
1 Granny Smith apple, thinly sliced
1/2 cup whole-berry cranberry sauce
2 Tbsp whole-grain mustard
1 (12-count) pkg Hawaiian rolls, split
4 cups sliced cooked turkey
• Whisk together oil, vinegar, orange juice, and honey in a large bowl. Add coleslaw and apple; toss and season with salt and pepper to taste.
• Stir together cranberry sauce and mustard; spread over bottom halves of rolls. Top each with desired amount of turkey and coleslaw. Cover with roll tops. Serve immediately.
