Father’s Day Bacon Cornmeal Pancakes

Bacon Cornmeal PancakesTreat Dad to these Natural & Organic big pancakes with bacon in them. This popular maple and bacon flavor pairing is sure to excite. When we made these big, bad boys in our test kitchen, we were in awe of how delicious they were. These pancakes didn’t last long and were scarfed up by our team in a hurry!

Natural and Organic Bacon Cornmeal Pancakes
Serves: 6
  • 6 slices center-cut bacon
  • 2 cups self-rising yellow cornmeal mix
  • ¼ cup white-whole wheat flour (or sub all-purpose flour)
  • ¼ cup sugar
  • 1⅓ cups buttermilk
  • 2 large eggs
  • 5 tablespoons vegetable oil, divided
  • 2 teaspoons pure vanilla extract
  • Pure maple syrup
  • Additional center-cut bacon, cooked (optional)
  1. Cook 6 slices bacon in a skillet until crisp, and crumble.
  2. Combine cornmeal mix, flour, and sugar in a medium bowl.
  3. Whisk together buttermilk, eggs, 4 tablespoons oil and vanilla in another bowl.
  4. Add to cornmeal mixture, stirring until blended.
  5. Stir in crumbled bacon.
  6. Brush a large nonstick skillet with remaining 1 tablespoon oil; heat over medium heat.
  7. Pour about ⅓ cup batter onto hot skillet for each pancake.
  8. Cook until tops are covered with bubbles.
  9. Turn and cook other side until golden brown.
  10. Serve with syrup.
  11. Garnish with additional bacon, if desired.
