Perhaps you’re feeling the effects of a long winter and have packed on a few pounds “for insulation.” Well, now it’s time to take charge of your diet again and watch those unwanted pounds melt off. We’ve got a fresh and delicious recipe for you to enjoy with your family for dinner tonight. This salad is colorful and packs a punch with a delicious homemade dressing. Fresh Strawberry, Feta, & Almond Salad with Homemade Balsamic Dressing
1/4 t garlic powder
1 t honey
1 t Dijon mustard
1/4 cup white balsamic raspberry blush vinegar
2 Tbsp balsamic vinegar
2 Tbsp brown sugar
1 cup vegetable oil
1 cup sliced almonds
1/2 head romaine lettuce, torn
1 bag baby lettuces
1 pint fresh strawberries, sliced
1 cup crumbled feta cheese
Optional: Grilled chicken or bacon crumbles for added protein
In a bowl, prepare the dressing by whisking together the garlic powder, honey, Dijon mustard, raspberry vinegar, balsamic vinegar, brown sugar, and vegetable oil. In a large bowl, toss together the almonds, lettuces, strawberries, and feta cheese. Cover with dressing, and toss to serve.
