Fruit, Fruit and More Fruit…Please!

My children love, love, love fruit! I am always looking for creative ways to include fruit with meals and snacks.  Sunday morning breakfast is a big deal at our house.  I always prepare a big feast before church because the rest of the day I don’t cook and we relax and spend time together as a family.  Family time is so important to me.  God has blessed us with our two children in our home for at least eighteen years and we want to make the most of our time together.  Laughing, humor and just simply being relational together is a big part of who our family is.  Food is a big bonding component in our home.  The Langner’s are foodies! We love all kinds of food and are always up to the challenge to try new things.  One of my children’s favorite Sunday morning meals is Fruit Crepes. Below is the recipe and I hope you will enjoy this tasty treat with your family.

Fruit Crepes

1 pkg of 9 inch French crepes

1 cup of fresh strawberries

1 cup of fresh blueberries

1 cup of fresh raspberries

1 cup of bananas

2 cups of heavy whipping cream

½ cup of sugar

Combine all the fruit in a bowl and place in the refrigerator while you prepare the cream.  In an electric mixer, whip the cream to medium peaks.  Add sugar to cream and continue to whip to stiff peaks.  Lay your French crepe out flat and place fruit in the center of the crepe, place whipping cream on top of fruit and roll crepe up.  You can place a dollop of cream on top and garnish with fruit if you would like.  This can be a great breakfast for dinner night and add bacon as a side.

    We LOVE LOVE LOVE recipes like this in our family. I just wanted to share I found a crepe recipe in Betty crocker cookbook that is super easy to make and now on weekends I can spontaneously whip up some crepes for mere penny’s.
