Gluten Free Mini Rice Cake Stacks

We know that we have lots of fans of our gluten free meal plans, so we thought some of you would enjoy this gluten free snack for your kids! Whether your kids eat gluten free on a regular basis or not, this would make a great after school snack that is sure to disappear before you even expect it!

This snack comes together in less than 5 minutes and got a rave review from our taste testers, who loved the strawberry/banana/blueberry combination the most.


Gluten Free Rice Cake Stacks

Serves: 2
  • 4 mini kettle corn rice cakes
  • 2 tablespoons spreadable strawberry cream cheese spread
  • 4 banana slices
  • 4 blueberries
  • OR
  • 4 mini chocolate rice cakes
  • 2 tablespoons natural peanut butter
  • 4 banana slices
  • 4 Reese’s pieces candies
  1. Spread ½ tablespoon cream cheese or peanut butter on each rice cake. Top with banana slices and blueberries or Reese’s pieces candies.
