Healthy Cheesy Ham & Hash Brown Casserole

Cheesy Ham & Hash Brown Casserole
eMeals Plan: breakfast
Serves: 6
  • 8 ounce ham steak, diced
  • 20 ounce bag shredded hash brown potatoes, about 3½ cups
  • ½ small onion, chopped
  • 4 ounces sharp cheddar cheese, shredded, about 1 cup
  • 12 ounce can evaporated milk
  • 1 egg
  • ¾ teaspoon salt
  • ¼ teaspoon pepper
  1. Preheat oven to 350°F.
  2. Layer half of potatoes in an 8x8” baking dish or 2-quart casserole dish coated with cooking spray. Top with half of onion, half of ham, and half of cheese. Repeat layers.
  3. In a large bowl, whisk together milk, egg, salt, and pepper; pour over casserole.
  4. Cover dish with foil, and bake for 1 hour. Remove foil and bake 5 more minutes, or until top is browned & bubbly. Let stand 10 minutes before serving.

    Thank you for the suggestion, but what exactly is healthy about this except for the egg (if it is organic) and the onion? The ham maybe – also only if it is organic. This will only make the average school kid fat (and worse) if he/she eats is more than once a week. Rather just fry a nice organic egg – or better omelette with some tomatoes, mushrooms … maybe a sprinkle of organic cheese on top for taste, but not necessary.

      Melanie- This breakfast recipe includes protein, carbohydrates, and dairy, making it a well-rounded meal. Please feel free to use organic items when you wish, and to choose low fat dairy (the cheese and evaporated milk in this case). The ham called for is a lean cut of meat.The goal of our Healthy Breakfast Plan is to provide homemade, well-rounded recipes that are part of a balanced diet and are budget-friendly and quick.
