Salad for breakfast? Yes, we know this may seem odd—but stay with us.
A salad is a smart way to get at least two extra servings of vegetables—it’s balanced, filling, and will give you sustained energy all morning long—and unlike cereal or toast or biscuits, a salad won’t leave you feeling bloated and weighed down.
Breakfast salads are always a great way to reset after a weekend or holiday of splurge-worthy eating, too. We feature this recipe in our 3-Day Post-Holiday Diet Reset, but you can certainly make this breakfast salad any day of the week, regardless of proximity to a holiday.
We like the balance of bacon, avocado, and a heart-healthy olive oil-based vinaigrette, but you can use any combination of ingredients you like and have on hand. Avocado and grapefruit? That would be great in the winter. Kale, blueberries, and quinoa? The filling fiber and protein in the grains will give you all-morning energy, while the kale and blueberries serve up loads of vitamins and minerals.
Keep things simple with your first breakfast salad, if you’ve never made one before. We promise this combination of eggs, bacon, and avocado is worth waking up for.

Bacon, Egg, and Avocado Breakfast Salad
1 (5-oz) pkg baby arugula
1 head Bibb lettuce, cut or torn
8 slices center-cut bacon
3 Tbsp sherry vinegar
1 Tbsp Dijon mustard
1 Tbsp olive oil
4 large eggs
1 avocado, sliced
1. Combine salad greens in a large bowl.
2. Cook bacon, in batches, in a large nonstick skillet over medium heat 6 minutes or until crisp. Remove bacon, reserving 2 Tbsp drippings in skillet. Break bacon into large pieces, and set aside.
3. Add shallots to drippings in pan; cook 5 minutes. Add vinegar and mustard. Stir as it boils for 20 seconds; remove from heat. Drizzle hot dressing over greens; toss. Divide among 4 plates.
4, Heat olive oil over medium heat; crack 4 eggs into pan. Cook to desired doneness. Season lightly with salt and pepper.
5. Top each plate with 2 eggs, bacon, and avocado slices.
