Garam masala is a magical spice mixture. The warm, tongue-tingling Indian spice combines cloves, cinnamon, mace, peppercorn, cardamom, coriander, cumin, and bay leaf. It turns simple dinners into truly special dishes, and here, in this Instant Pot dinner, it makes basic beef stew sing with flavor.
Sweet potatoes are really a perfect pair with garam masala, but to cut the sweetness (this is dinner, after all), we combine with acidic tomatoes, tomato paste, and the umami flavors of beef and bone broth.
While the stew cooks in the Instant Pot, make the “Couscous” from quick-cooking cauliflower crumbles. We add some more sweetness with golden raisins, but fresh cilantro and raw almonds blunt the sweetness for the perfect side to this special beef stew.
Instant Pot Masala-Spiced Beef-and-Sweet Potato Stew and “Couscous” with Almonds and Raisins
Serves 6/Family Meal Plan
Ingredients for Stew
2 lb boneless chuck roast, well trimmed and cut into 2-inch cubes
2 (16-oz) pkg peeled, cubed sweet potatoes
2 (8-oz) pkg sliced onions
1 (14.5-oz) can organic diced tomatoes
1 (6-oz) can tomato paste
1 1/2 cups organic beef bone broth (or use organic beef broth)
1 1/2 Tbsp garam masala
3/4 tsp salt
3/4 tsp pepper
Ingredients for “Couscous”
1 (16-oz) pkg cauliflower crumbles (such as Green Giant)
3 Tbsp raw almonds, coarsely chopped (see Note)
2 cloves garlic, pressed
1 1/2 Tbsp avocado oil
1/2 tsp salt
1/2 tsp pepper
1/4 cup golden raisins
1/4 cup chopped fresh cilantro
Instructions for Stew
- Combine all ingredients in an Instant Pot. Cover and cook 25 to 30 minutes on “Meat/Stew” setting or until beef is tender. When the timer goes off, turn the vent on the lid, and let steam release. Let stand 5 to 10 minutes.
Instructions for “Couscous”
- While the stew cooks, preheat oven to 400°F. Combine cauliflower, nuts, garlic, oil, salt, and pepper on a large rimmed baking sheet. Bake 20 minutes or until browned, stirring once.
- Stir raisins and cilantro into “couscous” mixture before serving.
