A Favorite Recipe~ Baked Blueberry Oatmeal

Baked Blueberry Oatmeal

½ c or stick margarine

1 c brown sugar

1 t vanilla

2 beaten eggs

1 c milk*

3 c dry oatmeal

1 t salt

2 t baking powder

½ t cinnamon

1+ c or 1 pint  blueberries

(*Need extra milk to serve over baked oatmeal servings)


Melt margarine. Stir in brown sugar, vanilla, eggs, and milk. Add oatmeal and remaining dry ingredients. Fold in blueberries.  Pour into a buttered 8” square pan. Bake for 25–30 minutes at 350 until firm in the center. Serve hot in a bowl with milk or cream poured over baked oatmeal and enjoy!

    Sounds delicious! I’ve never heard of that orphanage before…have to check it out! Good name for a place that welcomes children. 🙂

    does it matter what kind of oatmeal you use? i have quick oatmeal (not instant) in the pantry. Also, can you make this the night before unbaked and keep it in the refrigerator? Then pop it in the oven in the morning while everyone is getting dressed?

      Hello! According to Jane, quick oatmeal is fine. Also, you can keep it unbaked in the refrigerator overnight and bake in the a.m. Great time saver ideas! Make sure to stay tuned….we’ll have more information coming up about Canaan orphanage.
