Mini Pumpkin Pie Bites

When I was maybe twelve or so, my dad and I made all the pies for Thanksgiving dinner. If you knew my dad now, you’d see he isn’t much of a cook these days, and leaves it to mom and/or his {grown} kiddos, including yours truly. That time we made pies together is something that is so special to me, and something I will always remember, fondly.
Also, because I often reminisce over that day, guess who is always in charge of dessert for the any major holiday with my family?
But this year, I have been determined to lose weight once and for all! Several ways I have done this is by meal planning {utilizing emeals. duh}, making myself go to the gym regularly, and by still allowing the occasional indulgence, such as pie.
 
 
 
So I did what any foodie in charge of dessert would do — I made mini pie bites! That way I get my pumpkin fix, without too much guilt {or whipped cream on top!}.
Mini Pumpkin Pie
{serves 12}
Ingredients:
1 15oz can pumpkin pie
1 12ox can Evaporated Milk
6 tbsp Splenda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
2 9-inch pie crust doughs {pre-made from a box}
whipped cream {optional}
To make:
Prep dough. Using a bowl or 4 inch round cookie cutter, cut out 12 circles from the pie crust doughs.
Place each circle into a pre-greased muffin tin. Press them in, letting the sides come up for a fun look.
Prepare pie mix to can directions, and pour your filling into each muffin tin cup. Fill them to the very top.
Bake your muffin tin pumpkin pies at 425* for 15 minutes. Then turn your heat down to 350* and bake them for 25-30 minutes.
