On the Menu: Paleo Sweet Potatoes with Arugula Pesto, Bacon and Fried Eggs

Sweet Potatoes with Arugula Pesto and Fried Eggs | eMeals

Baby arugula stars in this Paleo and Clean Eating recipe this week, serving double duty as both a light salad and the base of a homemade pesto. It’s a perfect pair with colorful sweet potatoes. With 5 grams of fiber and loads of Vitamin A and calcium in every small sweet potato, they’re a great choice for healthy eating. (You can learn more about the health benefits of sweet potatoes here.)

While the potatoes bake, toss together the quick baby arugula salad and use your food processor for the easy walnut-and-arugula pesto. Fried eggs and crispy bacon add protein and a salty crunch. And if you’re preparing for a spring race, our on-staff registered dietitians recommend this recipe as a good one-dish dinner the night before your run.
