The homemade sun-dried tomato sauce is deceptively fancy—cider vinegar, sun-dried tomatoes, and basil whip together in the blender in a flash, but it tastes like something you’d find on the menu at a steakhouse. Sun-dried tomatoes are exactly as the name suggests: tomatoes that have been dried in the sun (or by other means). They’re chewy and slightly sweet, and come either packed in oil or dry-packed in cellophane. In this recipe, we call for tomatoes that have been packed in oil, which keeps the tomatoes from drying out. The infused oil is great to keep on hand for dressings and pasta tosses, or brushed over crostini.
