Pecan Pie

This pecan pie is rich, it sets up beautifully. The Lyle’s syrup gives it a deep caramel flavor. This pie is perfect for anyone that can’t have corn syrup, or wants to avoid it. I prefer the flavor to a traditional pie with corn syrup. I use five eggs, you can get away with 4 eggs but I use five to ensure it sets beautifully. A little less sugar 3/4 cup would be fine. I didn’t have two full cups of nuts but about  1 3/4, I like lots of pecans in my pie. If you want to add molasses you can add a tablespoon. Brandy can be left out completely.

Pecan Pie (No Corn Syrup)

5 eggs
1 cup granulated sugar*
3 tablespoons melted or very soft butter
3/4 cup Lyle’s Golden Syrup
1 tablespoon brandy or rum
1 1/2 teaspoons butter vanilla extract
pinch of salt
2 cup chopped pecans
2 unbaked nine inch pie crusts

Beat eggs, butter, and sugar until light and fluffy. Add the remaining ingredients- except the pecans and pie crust, beat well. Stir pecans into the egg mixture. Pour equal amounts into the two pie crusts.

Bake in a preheated 400 degree oven for 15 minutes.

Turn oven down to 300 degrees. Bake 300 for 30-35 minutes, until mostly set. The pies will finish setting as they cool.Use a pie shield if the crust is getting too brown.

*Brown sugar can be used

Notes-

1 tablespoon of molasses can be added to the recipe

Brandy can be omitted

Vanilla extract can be substituted for the Butter Vanilla Extract.
