Saint Paddy’s! A blessing after all…

In Ireland they say that St. Patrick’s Day is “an enchanted time – a day to begin transforming winter’s dreams into summer’s magic.” With all the turmoil we seem to be facing in the world, it seems at once frivolous and hope-filled to give enchantment and leprechauns a second thought. But I will always accept a blessing and any encouragement, and decided to just join in the spirit of this holiday.

First, we had so much fun with the perfection of the “St. Paddy’s Mint Brownies” recipe process. The final recipe is a combination of our favorite home-made brownie secrets, all rolled up into one irresistible and magically delicious “pot of gold at the end of the rainbow.” Rich chocolate brownies topped with buttery mint icing and a chocolate glaze like these are well worth the effort.

And I certainly felt my Irish eyes smilin’ listening to the bagpipe band last night while my neighbor, 8-yr old Blakely (far right) Irish step-danced! She was one of “four leaping ladies” who can kick up their heels with a “Reel” “Jig” or a “Hornpipe” just to make your face crack from smilin’! Now that will put you in the mood for St. Patrick’s Day! My son, Brock, was also visited by little “Leprechauns” one night this past week to remind him of the joys and pitfalls of turning 21, especially around St. Paddy’s Day. He was “shrined” (an insider term for “loved with a whole lot of trouble and silliness for a very special occasion”) with a “pot of gold” (an actual toilet spray painted metallic gold) at the end of a rainbow (a garden arch wrapped in rainbow colors.) He immediately “did a little jig” and got into the spirit of the celebratory yard art! All in all, this holiday seems to be a lot about music, a little dancing and enjoying each other. I say anytime you “stop the madness” to be or to give a blessing (encouragement) is icing on the brownie! The heart of all we do here at E-Meals is to be a blessing and make a way for busy people to enjoy the people they love in a daily and intentional way.

So I leave you with a little Irish blessing to bring a little encouragement to you today! Have a Happy St. Patrick’s Day!
