Snickerdoodle Ice-Cream Sandwich

It’s hard to look at this picture in the summer heat and not just want to dive in and lick the plate clean! These sugar and cinnamon coated cookies are old fashioned and fabulous with their crinkly tops. But then they get a whole new spin as an ice cream sandwich! Watch as these get gobbled up before you even realize it.

Snickerdoodle Ice Cream Sandwich

Serves: 8
  • ½ c butter, softened
  • 1 c + 2 T sugar
  • ¼ t baking soda
  • ¼ t cream of tartar
  • 1 egg
  • ½ t vanilla
  • 1½ c all-purpose flour
  • 1 t ground cinnamon
  • Ice cream
  • Caramel sauce (Optional)
  1. In a med mixing blowl, beat butter with an electric mixer on med for 30 seconds.
  2. Add 1 c sugar, baking soda, and cream of tartar.
  3. Beat until combined, scraping sides of bowl occasionally.
  4. Beat in egg & vanilla until combined.
  5. Beat in as much of the flour as possible with the mixer.
  6. Stir in any remaining flour.
  7. Cover & chill dough for about an hour.
  8. Combine the 2 T sugar & the cinnamon.
  9. Roll dough into 1 inch balls.
  10. Cover dough balls in cinnamon-sugar to coat.
  11. Place 2 inches apart on ungreased cookie sheet.
  12. Bake in oven at 375 for 10 min until edges are golden.
  13. Transfer to wire rack & let cool.
  14. Take two cookies and sandwich ice cream between the two.
  15. You can also serve extra ice cream on the side & drizzle w/ caramel.
