Snickers Cheesecake Cups

We all love to indulge in our favorite candy bars.  Even better, you should bake a delicious treat with them.  When the kids get home from school, it will be a sure fire hit for an afternoon snack.  While we are looking for healthy snacks for after school, it is nice to have a yummy favorite every now and then.  So whether you love Snickers, Twix or a Hershey bar, you will love this delectable individual cheesecake garnished with your family favorite!

2      cups of chopped Snickers Bars
2 ½ cups graham cracker crumbs (Graham Crackers)
2 T  granulated sugar
5 T  melted butter
2      8oz packages softened cream cheese
1      cup of granulated sugar
2      eggs
1 T   vanilla extract
½t   chocolate extract
3 T  caramel sauces

Preheat oven to 350°.  Place chopped snicker bars in a bowl. Place graham crackers in a zip lock freezer bag and crush with a roller pin until fine.  Place graham cracker crumbs, melted butter, sugar into a mixing bowl and mix thoroughly.  Place 3 spoonfuls of graham cracker mixture into each muffin pan and press firmly to cover the bottom of the pan.  Bake for 5 minutes.  Remove and cool completely.

Place cream cheese, and sugar in a mixing bowl and beat with an electric mixer until creamy.  Add eggs, caramel sauce, vanilla and chocolate extract and blend well.  Scrap the sides of your bowl to ensure all ingredients are mixed well.  Pour ¼ cup of cheesecake mixture over each baked crust and top with snickers.  You can use any of your favorite candy bars if snickers are not your favorite.  Bake for 25 minutes.  Cheesecake edges should be just beginning to brown and centers are set.  Remove from the oven and cool completely.  Top with caramel sauce.  To really turn it up, add a scoop of vanilla ice-cream.
