Spiced Apple Cider Cupcakes from a Beautiful Ruckus

This recipe was inspired by all of my favorite flavors and scents. I love the way that food wraps people up and makes them feel comfortable and loved. Warm vanilla, spicy cinnamon, and delicious apples all combine to create this cozy cupcake.

I think one of the best…and most delicious….ways to say, “I love you,” is to fix a special dessert for the special ones in my life. Their smiles after the first bite are all I need to feel loved right back!

Spiced Apple Cider Cupcakes
makes 2 dozen cupcakes
  • 1 cup butter
  • 1 ¾ cups granulated sugar
  • 3 whole eggs + 3 yolks
  • teaspoons of vanilla
  • ¾ cup of apple cider
  • ½ cup of unsweetened applesauce
  • 2 ¾ cups flour
  • teaspoons of baking powder
  • teaspoon of baking soda
  • ½ teaspoon of salt
  • teaspoons of cinnamon
Cream butter and sugar for several minutes until very well combined. Stir in eggs and vanilla. Stir in apple cider and applesauce.
 
In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
 
Add the dry ingredients to the wet ingredients one cup at a time.
Fill cupcake liners 2/3 full of batter and bake at 350 degrees for 23-25 minutes.
