As it begins to warm up in the spring, everyone starts turning from their favorite hearty soups and warm meals and starts looking for ways to eat a little bit lighter and fresher. Not to mention the fact that with the change in seasons, comes the time to once again think about bathing suit season, shorts, and those pesky last 5 pounds you might want to drop. Well, this recipe might be just what you’re looking for if you feel the same way.
I got this recipe from a friend’s mom when I stayed with her family back in college and it’s still a staple at my house 5 years later.I usually double this recipe because I go through it so fast, I literally eat this spinach salad sometimes about 4 or 5 times a week for lunch because I like it THAT much. The great thing about this is you probably already have most of the ingredients in your pantry which makes it a cheap meal as well as a healthy meal!
1/4 c Splenda
1/4 c Apple cider vinegar
1/2 c Vegetable oil
1/4 t garlic powder
1/4 t celery seed
Mix well in lidded container. Chill in refrigerator, and serve over spinach. I, sometimes, add boiled eggs as shown above or feta cheese to get a little extra energy giving power. It also makes a great side dish for dinner.
