Does your go-to snack typically contain a grain and/or dairy? Wondering how to supplement your Paleo Meal Plan with snacks? We’ve got some great ideas to keep you happy, full, and on-track with your Paleo Meal Plan without having to resort to deli meat and raw veggies every afternoon.

Our zucchini hummus got the highest marks from our taste testers who loved the creamy texture and rich, tahini flavor. Pack a container of this dip with any crisp raw vegetables for dipping and you’ll have a satisfying snack to keep you from reaching for the processed snacks in the vending machine mid-afternoon.

Zucchini Hummus

Serves: 8
  • 2 medium zucchini, peeled and chopped
  • ½ cup tahini
  • ⅓ cup lemon juice
  • ⅓ cup olive oil
  • 3 garlic cloves
  • 1½ teaspoons cumin
  • Salt & pepper to taste
  1. Combine all ingredients in the base of a food processor, and process until smooth.
  2. Serve with crisp raw veggies, such as carrots, celery sticks, broccoli, cherry tomatoes, or cucumber slices, for dipping.

Crispy Kale Chips are a perfect alternative to potato chips when you get the craving for something crunchy and salty. Drizzle trimmed kale leaves with olive oil and sprinkle with salt and pepper. Place in a single layer on a baking sheet, and bake at 350° for about 15 minutes or until crisp. We couldn’t get enough of these!

For an easy packable Paleo Trail Mix, combine equal amounts natural raw almonds, pumpkin seeds, sunflower seeds, unsweetened dried blueberries, and unsweetened flaked coconut. You can use any kind of nuts, seeds, and dried fruits you like, but make sure to choose unsweetened dried fruit.

    I was so excited to try this new hummus recipe but mine came out very runny and bland. I tried adding some salt & more garlic but not sure how to thicken it up. More zucchini?

      Keri- If you prefer a thicker consistency, reduce the lemon juice and olive oil slightly. Kick up the flavor by adding additional garlic, more cumin, and a dash of cayenne pepper and paprika.
