Here, our gluten free menu writer, Lori, shares some of her thoughts on this menu.
Q: It seems like gluten free is a buzzword that is popping up a lot recently, what exactly does it mean?
A: A gluten free diet is one that excludes the protein gluten. Gluten is found in grains such as wheat, barley & rye. According to some researchers, everyone has some negative reaction to gluten. Many people report feeling better on a gluten free diet.
Q: How long have you been eating a gluten-free diet and how has it been adjusting to this diet?
A: I have been on a gluten-free diet for several years because of gluten intolerance and the desire for a healthier lifestyle. It was an easy transition for me because I focused on the benefits of being g-free and all the things I could eat, instead of the things that I could no longer eat.
Q: How did you first hear about the company or start using the E-Mealz service?
A: Jane & Jenny spoke at a church luncheon that I attended. At the time I was frustrated with my inability to find the time, motivation & energy to prepare dinners for my husband & three teenagers. E-mealz sounded like an answer to my prayers.
Q: What made you decide to specialize in the gluten free category?
A: The gluten free lifestyle has become very popular. Some people must eliminate gluten from their diet because of celiac disease or gluten intolerance, while many other people choose to avoid gluten for other reasons. Because of my own gluten intolerance, I became interested in preparing easy, family friendly, budget friendly G-free meals for my whole family to enjoy. I love sharing them with the E-Mealz community.
Q: What principles do you use when putting this menu together?
A: I try to use basic, fresh ingredients easily found in most grocery stores. The G-free meals consist of fresh fruits, vegetables, eggs, dairy products, nuts and seeds, meats, poultry & fish. Each meal is healthy, delicious & gluten free.
Q: What is your best advice for someone who is new to the gluten free diet?
Q: What are some of your favorite gluten free meals?
A: My favorite recipes are “Chicken & Artichokes over G-free spaghetti” and “Summer Rice & Beans with G-free crackers”. I love baked sweet potatoes!
Q: Does being gluten-free make it hard to stay within a budget? What is the best way you think your plan can help those new to this lifestyle?
A: It is easy to stay within a budget if you stay away from prepackaged gluten free products. The E-Mealz G-free plan consists of fresh meat & produce. These foods offer a lot of nutritional value, compared to refined, processed gluten free products.
