The Winning Cranberry Dish

We’re so happy that the years of tradition in our families have provided a wealth of great recipes for us to include in our line up.

This year we decided to ‘simplify’ our Holiday plan ‘1-notch’, in hopes to make prep time shorter and amount of ingredients less involved.  WELL! We’ve had so many of you write in and ask about the VERY dish we replaced this year! The favorite recipe is our Cranberry Marshmallow Delight. This dish is from my sister-in-law who brings it every year to our Holiday celebrations. We wanted to give it back to you in hopes to not disappoint!!! So, here you go! Get out a big spoon and dig in. It IS yummy!

Make Ahead Cranberry Marshmallow Delight:

2 c cranberries

1/2 c chopped pecans

20 oz can crushed pineapple, drained well

10 oz bag mini marshmallows

8 oz Cool Whip


Rinse cranberries and discard rotten ones. In a food processor or blender, chop 2 cups fresh cranberries until finely chopped. In a bowl, combine cranberries, pineapple and pecans. Right before serving, toss in marshmallows & fold in whipped topping until well blended. Pour into a festive bowl; cover with plastic wrap and refrigerate until time to serve.

**Make partially ahead; refrigerate. Add marshmallows and cool whip right before serving.

    This is a good rcipe to use those marshmallows that are getting dried up. They will soak up any juices released while the salad sets waiting to be served.
