Today, we’re welcoming one of our bloggers to share her Vegan Chocolate Almond Cookies recipe with us. Just looking at the picture makes us want to dunk them in milk and enjoy! Guess that would take out the vegan part though, huh?

Check out these amazing Chocolate Almond Cloud Cookies – these are vegan and the best cookies I have ever made.

Everyone that taste tested these fell in love right away. They all liked these the most out of the creations I made that were spiced chili chocolate cookies and chocolate-covered pumpkin banana bread muffin balls. They said this tasted like a marcipan but even better. They also preferred it cold while I prefer it slightly warmed in a microwave so that the chocolate becomes beautifully melty. Whichever way you prefer to eat your cookies, you will not be disappointed by these – I guarantee it!

Chocolate Almond Cookies – Vegan

Ingredients:

1 cup almond flour

3/4 cup sprouted whole wheat flour

1/4 cacao powder

1/3 cup light brown sugar, slightly packed

1/3 cup stevia fiber baking blend

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

3 tsp Inka or coffee granules

2 tsp almond extract

1/2 cup applesauce, unsweetened

2 Tbsp coconut oil

1 1/2 tsp lemon juice

1/2 cup dark chocolate chips
