Mediterranean White Pizzas with Chicken, Spinach and Grapes

In May, we’re celebrating the foods of countries such as Spain, Italy and Greece with International Mediterranean Diet month. The Mediterranean diet is packed with health benefits from fish, heart-healthy oils, nuts and in-season produce. Our Mediterranean plan is a perfect fit for families looking to eat fresh fare, and there’s a for-two version as well. This recipe is a recent favorite of ours from the Mediterranean plan. We promise it’ll win you over (yes, even the grapes!).

White Pizzas with Chicken, Spinach and Grapes
  • 2 (12-inch) whole-wheat prebaked pizza crusts
  • 3 cloves garlic, finely minced
  • ¼ cup olive oil, divided
  • 2 (8-oz) balls fresh mozzarella cheese, thinly sliced
  • 3 cups shredded deli rotisserie chicken
  • 4 cups baby spinach
  • 2 cups red grapes, halved
  • ½ cup thinly sliced red onion
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt, ½ teaspoon pepper
  1. Preheat oven to 425 degrees. Place each crust on a foil-lined baking sheet.
  2. Stir together garlic and 2 tablespoons oil; brush over crusts, and top with cheese.
  3. Bake 12 minutes or until cheese is melted and crust is warm, rotating pans after 6 minutes. (Blot any excess liquid from cheese with paper towels, if necessary.)
  4. Toss together chicken, spinach, grapes, onion, lemon juice and remaining 2 tablespoons oil; divide mixture between crusts.
  5. Bake 5 minutes or until spinach wilts; sprinkle with salt and pepper.
